Phones
Android is very insecure, even de-googled phones, even F-Droid apps.
For proof check "permissions" for each app in F-Droid.
A middle ground is Ubuntu Touch and other less popular OS's.
In comparison in IOS; you can restrict/disable EVERY APP ACCESS at the OS level (compared to Android).
The best secure phone is a dumb phone (for calls only) and a separate secure Wi-Fi device,
one that you can control/configure completely, maybe a Linux device. More coming soon...
Some Recommendations:
IOS/IPhones: With all restrictions enabled
4.7" screens (6s, 7, 8) OR 5.5" screens (6s+, 7Plus, 8Plus)
other newer models are not a good value (proof is in the detailed comparisons), unless you need a larger IPhone .
UBuntu Touch: UBPorts (with a Nexus 5, others have MORE bugs)
SailFish OS
Android: Least secure phone OS (even if de-googled, even if using F-Droid)
Graphene OS (most secure Android, some issues)
Avoid MicroG (if you want less tracking/Google)
CalyxOS (easiest install)

- More secure would be IPhone
- Even more secure would be BlueStacks on PC.
